One of my favorite Champagnes. Light golden in color, clear and bright. A good amount of very tiny bubbles make a nice mousse. The nose is pronounced with red apples, pastry dough, and toast. Full bodied. Great energy and balance. On the palate, this is delicious with flavors of apples, slight ginger and underlying char. Deep. Long finish. At age 15, I am not sure this is at peak yet. it should drink well for another ten to fifteen years. it will work with most foods and worked great with Brie in a Pastry Dough.

Really impressive showing for this Bordeaux. Purple in color, opaque and bright. The nose is great with cassis, cigar box, graphite and slight earthiness. Full bodied. Light tannins. Great balance. On the palate, this is complex and deep. Layers of cassis, tobacco and earthiness. Long finish. This is delicious and contemplative on its own but would also be great with a hearty meal such as Prime Rib or a Vegetable Tagine. It still should have another ten to fifteen years left.

Ruby in color with purple hues, mostly clear and bright. The nose is nice with cherries, sour cherries, and slight cedar. Medium bodied. Light tannins. On the palate, this has a nice complexity. Flavors of cherries, spice, red raspberries and char. Long finish. This would be better with food. It worked well with assorted cheeses, but of course, Époisses would be great.

Ruby in color with purple hues, mostly clear and bright. The nose is great. Black cherries, cherries, spice and slight red currant note. Medium bodied. Great semi-plush texture. Nicely balanced. On the palate, this is young but drinking well. It has plenty of depth but unwinds quickly in the glass. Flavors of black cherries, currants with spice and slight char. Long finish. This should continue to drink well for the next ten years, maybe more. Very nice on its own, but would be better with food. This would work well with Couscous dishes or of course, braised beef.
