Saffron Fields planted their first vines in 2007 and by 2010 their first wines were ready, with a focus on Pinot Noir. This 2021 is a fresh and buoyant Pinot, brimming with bright expressive fruit like strawberry, red raspberry black cherry, Rainer cherry and blackberry. There is a slight herbal and wildflower note, as well as sandalwood, vanilla and a suggestion of cola and blueberry. The acidity drives this and gives structure to the tannins and was aged a scant 12 months in barrel with just 25% of those barrels being new French oak.
