The Signature Cabernet has been Chappellet’s flagship wine for over 30 years and it has proven itself to be a consistent, trustworthy and elegant wine. This has a slightly more earthy quality to it than previous vintages. It still retains noticeable blueberry and blackberry notes as is typical of Cabernet, but also has red currant, dusty powdered mocha and light wild mountain herbs. The acidity is a bit more obvious on this vintage as well as the minerality and moderate tannins, making this very harmonious. The oak is evident, however it does not come across as sweet vanilla, rather It offers slightly charred and smoky notes.
On day two, everything coalesces into a beautiful seamless wine that is a pleasure to drink, an elegant, old-school Cabernet that shows why Napa, and Chappellet have dominated for so long.
