Very nice value in Chablis. Light gold in color with some hay hues, clear and bright. The nose is great with lemons, slight Granny Smith apples, and a bit of crushed shells. Medium bodied. Nice texture. Good balance. On the palate, this is nice. Nothing profound but good wine that is drinking well. Flavors of green apples with slight lemons and minerality. Long finish. This is nice on its own but better with food. A nice choice for grilled Halibut. Drink over the next five years.

About 110 miles southeast of Paris, at the northern tip of the Burgundy wine region France lays Chablis. Chablis is the name of a village that has given its name to a region producing some of the best white wines in the world. The region of Chablis encompasses 19 towns and is about twenty by fifteen kilometers in size. In France, by law, wines are named after the place where they are fashioned and not the grape varietal. The wine producers of Chablis have spent hundreds of years determining which grapes produce the best wines for their soils and the answer: crisp, mineral-driven wines made from the Chardonnay grape.

From one of the top producers of Chablis. Impressive showing. Light gold in color, clear and bright. The nose has crushed shells, green apples, lemons and a slight waxy note. Great texture. Crisp acidity. On the palate, this is delicious. Crisp granny smith apples with crushed shells and slight lemon notes. Deep and complex. Long finish. This drinks well on its own and is very food friendly. Obviously shell fish but this went quite well with sweet potato sushi and even asparagus sushi. Drink over the next ten to fifteen years.

As prices for white Burgundy in general and Chablis in particular continue to rise, it is nice to find still affordable producers making great wine. This is one such producer. the wine is made in a concrete egg and sees no oak. Light golden in color with some green hues, clear and bright. The nose is nice with crushed shells, slight chalk/minerality and lemon. Medium bodied. Lean and racy texture. Good acidity. On the palate, lemons and crushed shells. Long finish. Green/gold in color, clear and bright. The nose is nice with pineapple, very slight oak and a bit of minerality. Medium bodied. Slightly oily texture. On the palate, an interesting combination of some pineapple and some green apples. It works. There is a nice depth despite its youth. Long, persistent finish. This is lovely on its own, but seems very food friendly. Sea food of course, but also a nice wine with say Hummus.

It was interesting to try this side by side with the Vaudesir. While neither one could be called blowsy or showy, this has more presence and weight. Light golden/green in color, clear and bright. The nose is classic Chablis. Green apples, chalky minerality, slight gunpowder and slight white flowers. Full bodied. Great balance. Firm acidity. On the palate, green apples with underlying minerality and just a hint of flint/gunpowder. Long finish. This is nice on its own but needs food to really shine. Shell fish would be ideal but it went nicely with Japanese Noodles as well. This
