From one of the top producers of Chablis. Impressive showing. Light gold in color, clear and bright. The nose has crushed shells, green apples, lemons and a slight waxy note. Great texture. Crisp acidity. On the palate, this is delicious. Crisp granny smith apples with crushed shells and slight lemon notes. Deep and complex. Long finish. This drinks well on its own and is very food friendly. Obviously shell fish but this went quite well with sweet potato sushi and even asparagus sushi. Drink over the next ten to fifteen years.

About 110 miles southeast of Paris, at the northern tip of the Burgundy wine region France lays Chablis. Chablis is the name of a village that has given its name to a region producing some of the best white wines in the world. The region of Chablis encompasses 19 towns and is about twenty by fifteen kilometers in size. In France, by law, wines are named after the place where they are fashioned and not the grape varietal. The wine producers of Chablis have spent hundreds of years determining which grapes produce the best wines for their soils and the answer: crisp, mineral-driven wines made from the Chardonnay grape.

As prices for white Burgundy in general and Chablis in particular continue to rise, it is nice to find still affordable producers making great wine. This is one such producer. the wine is made in a concrete egg and sees no oak. Light golden in color with some green hues, clear and bright. The nose is nice with crushed shells, slight chalk/minerality and lemon. Medium bodied. Lean and racy texture. Good acidity. On the palate, lemons and crushed shells. Long finish. This is drinking quite well. At a time when Burgundy prices are soaring and the "best" producers are unaffordable, Chablis still offers the ability to get a great wine. The question is how long will this continue. Light green/silver with a slight gold in color. The nose is pretty classic with crushed shells, chalk and green apples. On the palate, this has a much creamier texture and more rounded than expected. Presumably that is due to barrel fermentation and a bit higher alcohol levels. Dampt makes some of the best value in Chablis. With the price of the top two or three wineries going crazy, these are excellent wines that are affordable. Golden in color, clear and bright. The nose has great minerality/crushed shells and just a hint of lemon. Clean. On the palate, this is crisp and tasty. Crushed shells. Long finish. This is nice on its own but would be perfect with oysters or clams. Drink over the next ten to twelve years.

With most of my favorite Chablis producers now selling their wines for (well) north of $100 per bottle, Dampt has become one of our go to Chablis. Golden in color, clear and bright. The nose is slightly chalky with some minerality and slight lemon. Also some salinity. Full bodied. Crisp acidity. On the palate, lemons, chalk and minerality. Long finish. Delicious. This drinks well but better with food. Shellfish is ideal but so is Hummus and Roasted Veggies. Drink over the next seven to ten years.
