A delicate blend of whole cluster pressed Pinot Noir, along with Pinot Noir made saignée style (saignée’s primary function is to increase the concentration of flavor), this offers lovely and slightly muted notes of strawberry, melon, rose water, with back notes of raspberry, wet stone and light ginger. There is a terrific acidity running through this wine, no doubt from the Santa Lucia Highlands soils – decomposed granite - making for an excellent food companion wine. With fermentation and aging all in a scant three months, this rosé is bright and energizing and will serve its purpose well with a variety of foods.
