At a recent blind tasting, this seemed to be a love it or hate it wine.  It lacks the fruit of many Loire Sauvignon Blancs but has a depth and complexity that I find beguiling.  Light golden in color, clear and bright.  The nose is deep with lemon peel, very slight thyme/mint and nice minerality.  Creamy texture.  Crisp acidity.  On the palate, this is deep and complex.  Flavors of lemons with loads of minerality.  Long finish.  Based on prior vintages, I would say hold these for another five years and then drink for ten to fifteen after that.  They can be drunk on release but that seems like a waste of money as there are lots of other great choices for half the price in the Loire.  It is great on its own but will go well with many foods.  It would Baked Goat Cheese.
