
This is a Sake, made in Arkansas in the Junmai Daiginjo style. Theoretically, that should be the best Sake but I preferred the others in the lineup (https://www.intowine.com/reviews?region=&varietal=Sake&uid=Loren+Sonkin%2C+&score=&grade=All&vintage%5Bvalue%5D%5Byear%5D=&search=Origami&before=&after=&sort_by=created&sort_order=ASC ) Pale silvery/gold in color, clear and bright. The nose features a lot of alcohol on the nose (the wine lists 15.5%abv) along with slight honeydew, white raisins, and a bit pears. Full bodied. Moderate acidity. On the palate, there is again, a lot of alcohol showing that overwhelms the more subtle melon flavors. Admittedly, I am not a Sake expert and wonder if time will allow this to settle down a bit. It certainly makes choosing the right food pairing more important. The producers recommend braised eel, steak tartar, and caprese salad. I would go with big food and plenty of starches. Of course, undoubtedly, some people will love this. It certainly seems to be created intentionally and well crafted.
