NV Piper-Heidsieck Champagne Brut Rosé Sauvage, France, Wine Review

This Champagne is a blend of 50% Pinot Noir, 25% Pinot Meunier and 25% Chardonnay.  Light Salmon in color, clear and bright with a nice mousse of very tiny bubbles.  The nose is very nice with cherries, strawberries, yeast and a slight orange/citrus note.  Medium bodied.  Good acidity.  On the palate, this has a nice minerality along with cherries and strawberries.  Lively on the palate.  Long finish.  This is great on its own but also quite food friendly.  While it goes well with popcorn it will also work great with Chinese Food and of course grilled sea food.  Drink over the next ten years.
