Disgorged 28 October, 2022. Wow. This was spectacular. It is a blend of 71% Chardonnay and 29% Pinot Noir. It spent 13 years on its lees. Light golden in color, clear and bright with a nice mousse of tiny bubbles. The nose is amazing. It hits first with pastry dough that is slightly cooked followed by crisp apples that seem to "bake" in the glass. With air, there is some orange citrus in the background. An earthy, not quite mushroom note steadily builds underneath the fruit. There is so much going on and then the glass is empty (but the aromas continue). Full bodied. Great energy and balance. excellent acidity. On the palate, this is deep, complex and delicious. Layers of apples, baked apples, slight orange along with slight ginger notes and a solid earthiness. The finish goes on forever. This is expensive but not crazy for its quality. It is wonderful on its own but will work with just about any food from popcorn to sushi to prime rib. It has a quality that it seems both aged and youthful at the same time, so it is unclear how this will age. Best guess is that 15 or 20 years won't be a problem.
