Another really enjoyable sparkling wine utilizing Chenin Blanc grapes. This is a blend of 60% Chenin Blanc, 20% Chardonnay and 20% Cabernet France from the Loire Valley. Light golden in color with just a shade of ruby, clear and bright. A nice mousse with many smaller bubbles. The nose is interesting with red apples, pears, slight toast and just a hint of minerality. Medium bodied. Nice acidity. On the palate, this is tasty. It drinks easily. Flavors of apples/pears with slight lemons and a hint of char. Good finish. This drinks very well on its own and is also very food friendly. It would pair well with a garlic shrimp pasta. Drink over the next few years.
