Since its founding in 1735, Champagne Mandois has been family owned. All these years later, and with a commitment to farming organically, Mandois still produces exceptional Champagne. Their Brut Origine is comprised of 40% Chardonnay, 30% Pinot Noir and 30% Pinot Menuier. Very fine bubbles show off a creaminess to this Champagne, and this offers notes of apricot, lemon peel, lime kefir, light flaky biscuit notes and fresh ocean breeze. There is a beautiful integration with the various overlapping flavors and though the acidity is spot on, the wine itself exudes a clean and vibrant freshness. The average age of the vines is just 25 years old, so there is a playful youthfulness to this, which excites the palate and make this brut very engaging. The wine was aged in mainly stainless steel with just 10% of the wine in oak, hence the bright liveliness, while the light oak treatment provides additional structure.
