2023 Dakota Shy Cabernet Sauvignon Moulds Family Vineyard, USA, California, Napa, Oak Knoll, Wine Review

This is 100% Cabernet Sauvignon from Napa. The wine is very concentrated and tight right now but shows great potential. Purple in color, opaque and bright. The nose is nice (with some swirling) showing black cherries, some cassis, slight vanilla, and dark chocolate. Full bodied. Firm tannins. On the palate, black cherries are front and center. With some air, cassis, chocolate and slight earthiness come out. Some char as well. Long finish. This really needs five plus years in the cellar and should drink well for twenty after that. It is great on its own and would work nicely big/fatty foods while it is young. Prime Rib would be ideal. The score has plenty of upside as this wine develops.

Top 50 California Cabernet Sauvignons to Try Before You Quit Drinking (a non-dump bucket list if you will!)

In putting together a list of the top California Cabernets, there is sure to be some disagreement. I tried to include those wines that have a track record, the wineries still making great wines, those that seemed to have the commitment for the future and some personal favorites. I am sure I left some out. 1. Shafer Vineyards Cabernet Sauvignon Hillside Select – It’s always hard to name the number one wine. But this has a track record that’s very long. Even in less than stellar vintages, it is an outstanding wine. They just don’t seem to make a dud. My only complaint is the price at over $200 a bottle. But, in comparison to other Napa Cabs or elsewhere in the world, this is a fair price.

Gorgeous Napa Cab. Inky purple in color, opaque and shimmering bright. The nose is deep and concentrated with cassis, graphite, cedar, spice and slight tobacco. Full bodied. Great balance. Firm tannins. On the palate, this is delicious with a great texture. Concentrated. Flavors of cassis, earthiness and spice. Long finish. This is very young but quite accessible. It should drink well for twenty years. Nice on its own, this would work well with bigger foods that can stand up to the tannins. Of course, a steak, but also Roasted Root Vegetables.
