NV Bollinger Champagne Special Cuvée 007 James Bond No Time to Die, France, Wine Review

This is a commemorative bottle for the release of the James Bond movie, No Time to Die. Golden in color, clear and bright, with a steady stream of tiny bubbles. The bubbles disappear quickly in the glass though. The nose is toasty with a bit of nuttiness and brioche. Also some smoke and slight apple. Tart green apples on the palate. Some depth. Easy drinking with a long finish the begs another sip. This is a fun wine and for a James Bond themed party would be great but at the same time, this is $20 more than the regular version and really not as good. It is very food friendly and drinks well on its own. This isn't one to age.

With 2/3 Pinot Noir and 1/3 Chardonnay, this is slowly opening up. Pale golden in color, clear and bright. Lots of tiny bubbles. The nose is boisterous with pears and green apples along with a bit of chalk and slight black cherry. Really a lot going on. Full bodied. Tart acidity. On the palate, green apples, slight lemon, slight black cherry with nice chalky minerality. Long, long finish. Plenty of depth and layered complexity. Still quite youthful but getting closer to peak. Drink over ten to fifteen years. This is very food friendly and went great with an assortment of cheeses

Golden in color with a persistent stream of tiny bubble. Frothy. The nose is tight at first but opens to show ginger, peach, toast, slight nuttiness and minerality. On the palate, this is dry and very crisp. Mostly about minerals, but some peach comes thru. With air, a slight strawberry note. An incredibly long finish. Just a delicious and complex Champagne. Drinking quite youthfully now, it should continue to drink well for the hext couple of decades. This will work with any food.

Always a great wine and great "value" in the world of expensive Champagne, it seems as the 2012 is one of the best vintages yet, perhaps surpassing 2008 and going back to 1996 for that level of quality, at least for my tastes. Light golden in color with slight green hues, clear and bright. The mousse is consistent with lots of tiny bubbles. The nose has a hint of toast upfront, followed by pears with a slight floral quality. Some citrus on the back end. Full bodied.

Consumed on a Celebrity Cruise Ship (Alaska) wine tasting. A blend of 75% Pinot Noir and 25% Chardonnay. Pale golden with some green hues and a steady stream of tiny bobbles. The nose is interesting with toast and limes. Perhaps a slight bit of oxidation. On the palate, this is somewhat demur but had plenty of stuffing. On the palate, more about minerality with slight pear and a bit of chalk. An interesting bitter almond note on the finish. Good acidity. This is drinking maturely but nice right now. Depending on how one likes older Champagnes, this is probably best drunk sooner th
