2019 Chimney Rock Cabernet Sauvignon Stags Leap District, USA, California, Napa, Wine Review

This is a blend of 84% Cabernet Sauvignon and 13% Merlot, 2% Petit Verdot and 1% Cabernet Franc. It is a beautiful wine. Purple in color, opaque and bright. The nose is lovely with cassis, slight black cherries, cedar and char. Full bodied. Firm tannins. On the palate, young, firm and deep. This needs time to open but still provides a lot now. Cassis, and cedar with underlying char. Long finish. This is great on its own and would work with a steak right now. Still, cellar for five years then drink for fifteen after that.

Top 50 California Cabernet Sauvignons to Try Before You Quit Drinking (a non-dump bucket list if you will!)

In putting together a list of the top California Cabernets, there is sure to be some disagreement. I tried to include those wines that have a track record, the wineries still making great wines, those that seemed to have the commitment for the future and some personal favorites. I am sure I left some out. 1. Shafer Vineyards Cabernet Sauvignon Hillside Select – It’s always hard to name the number one wine. But this has a track record that’s very long. Even in less than stellar vintages, it is an outstanding wine. They just don’t seem to make a dud. My only complaint is the price at over $200 a bottle. But, in comparison to other Napa Cabs or elsewhere in the world, this is a fair price.

Gorgeous wine that needs a bit of cellar time. This is a blend of 90% Cabernet Sauvignon, 5% Malbec and 5% Petit Verdot. Inly purple in color, magenta at the rim, clear and bright. The nose is tight but with air opens to cassis, chocolate, cedar and a scent best described as sauteed onions (unusual but very nice). Firm tannins. Full bodied. Good acidity. On the palate cassis, chocolate, char and a slight chalky note. Great almost seamless texture. A bit of tart raspberries make a delightful finish. This needs a few more years in the cellar or a long decant and the score will undou

This is a great bottle of Napa Cabernet even if a bit young. And that, is a great thing about Napa Cabs versus Bordeaux; they drink so well young. Purple in color, opaque and shimmering bright. The nose is great with cassis, slight blueberries, cedar, slight cigar box and spice. Also some char. Full bodied. Firm tannins. On the palate, there is lush cassis fruit with some blueberries.
