The wines of François Pinon have been some of our favorites for quite some time.  His son Julien is now involved with him at the winery.  This wine is so named as the grapes (100% Chenin Blanc) come from three separate plots.  The wines are fermented with native yeasts in old wooden vats in the naturally cool cellar carved out of a limestone hillside. After two to three months the fermentation stopes due to the cold temperatures.  The resulting wine is slightly sweet.  Silvery/green/gold in color, clear and bright.  The nose is interesting with tangerine, salinity and a slight almost minty note.  Oily texture with moderate acidity.  On the palate, this is delicious.  Deep and complex.  Notes of apples, some peach, and a slight honeyed note.  Long finish.  This is a fantastic wine that drinks great on its own but will work with many foods. It would be great with (spicy) Thai foods.  Drink over the next ten to twenty years.
