2012 Dalla Valle Cabernet Sauvignon, USA, California, Napa, Oakville, Wine Review

This is in a very nice place right now. It needs a bit of air to open and then is drinking well. 2012 is an excellent if not flamboyant vintage. Coupled with this very structured wine and it does need some coaxing. Inky purple in color, opaque and bright. The nose is classic with graphite, cassis, spice and cedar. Full bodied. Firm tannins. On the palate, this is very concentrated. Cassis, pencil lead and char. Long finish. Great balance. It is drinking well today but not yet at peak. This should easily go another twenty years. Great on its own, this will be excellent with food. Roasted meats or fowl would be great.

Top 50 California Cabernet Sauvignons to Try Before You Quit Drinking (a non-dump bucket list if you will!)

In putting together a list of the top California Cabernets, there is sure to be some disagreement. I tried to include those wines that have a track record, the wineries still making great wines, those that seemed to have the commitment for the future and some personal favorites. I am sure I left some out. 1. Shafer Vineyards Cabernet Sauvignon Hillside Select – It’s always hard to name the number one wine. But this has a track record that’s very long. Even in less than stellar vintages, it is an outstanding wine. They just don’t seem to make a dud. My only complaint is the price at over $200 a bottle. But, in comparison to other Napa Cabs or elsewhere in the world, this is a fair price.

This took a while to open up in the glass and then it was gorgeous. It is a blend of Cabernet Sauvignon (57%) and Cabernet Franc (43%). One of the Iconic California wines. Inky purple in color, magenta at the rim. The nose is beautiful with cassis, cedar, anise, some charcoal and slight blueberries. With air a woodsy quality emerges as well. On the palate, this has nice depth and complexity. Firm tannins. Sweet cassis fruit with some fresh tobacco notes intertwined. Very deep. It needs a few more years or a nice decant now. It requires big food but will work with it or as a glass

We had two bottles of this. The first was just amazing while the second was merely quite good. At age 16, bottle variation happens. The first bottle actually appeared and tasted older, so perhaps we just caught the second one in a dumb phase. Purple in color, a bit of bricking at the rim. The nose has cassis, camphor, slight cigar box and a sweet perfume. Full bodied. Tannins resolved. This is mature and at peak. Notes of cassis with underlying tobacco and slight char. Nice finish.
