Napa, Sonoma, Livermore, Woodinville, Rioja this summer..I mostly learn about global wines from great restaurants and wine bars in SF, Seattle, NY, Vegas, etc.
Astors classes are taught by various guest lecturers. There are also classes at many stores, like Bacchus, Red White & Bubbly, etc. You can also take a class at the wine center or other cooking school. But wine pairing is essentially a personal matter. You can buy a book or two and take a wine learning class or classes, in which you'll be able to try various different wines and come up with your own ideas about what kinds of pairings to do.

Astor wine store has many classes. I have not attended any but I have heard good things about them. It is an excellent store with great selection.
