France’s Champagne Taittinger started its U.S label with the opening of Domaine Carneros in 1987 and has gone on to create world-class sparkling wines in America, of which their flagship Le Reve has always been a consistent standout. This Blanc de Blanc is comprised of five Chardonnay clones from the Domaine’s Carneros estate fruit. Aged nearly six years and using first pressed juice, the carbonation is surprisingly mild and refined. In the glass a host of flavors open up including lemon biscuit, crisp green apple, lime meringue, raw almond, baked pie crust, and pear juice notes. The acidity is present without distracting and the slight mineral notes, typical of Carneros wine, is noticeable as a compliment without being overwrought. The end result is a wine that is delicate, lithe and sensitive.
